Oh boy! Talk about realization!!! I've been missing something from my muffins! Here is a new recipe.

2 cups of Bulkbarn Muffin Mix
2/4 tab. of veg. oil
1 egg
1/2 cup of milk
cinnamon
vanilla extract
buttermilk
baking powder


1 bowl - muffin mix, cinnamon, buttermilk (powder), baking powder

1 bowl - egg, milk, veg. oil,

1 small bowl - CHOCOLATE CHIPS - stir in a little bit of the dry ingredients


Then put all the liquids in the dry and last put in the chocolate chips!

Use an ice cream scoop to put batter into muffin pan!

this should make about 12 muffins
oven: 325 - 340 degrees

Makes 12
Ingredients

2 cups of Flour
1 Tbsp of Baking Powder
½ tsp of Salt
1/8 tsp of Ground Cinnamon
1 12 oz Bag of Milk Chocolate Chips
2/3 of a cup of Whole Milk
½ cup of Melted Unsalted Butter
2 Tbsp of Sour Cream
2 Eggs
½ tsp of Vanilla Extract
1/3 cup of Granulated Sugar
1/3 cup of Brown Sugar
Preparation,
1) Preheat your oven to 400 degrees. Line a 12 cup muffin tin with liners and spray the edges with non stick cooking spray, set aside.
2) In a small bowl mix together the first 4 ingredients and set aside.
3) In another small bowl add the chocolate chips and half a cup of the dry ingredients mix and toss to make sure each piece of chocolate chips are coated in the flour mixture.
4) In a large bowl mix together the remaining ingredients until combined. Add the dry ingredients and just mix to combine but not over mixing. Using a spatula fold in the chocolate chip mixture and make sure they are evenly spread out through out the batter.
5) Using a large ice cream scoop, divide the batter evenly in the prepared muffin pan.
6) Bake for 15 to 18 minutes or until a toothpick inserted in the center of the muffin comes out clean.
Who doesn’t love muffins? Especially chocolate chip muffins, they are my absolute favorite!! I think everybody needs a good standard muffin recipe and this is the best one, I can guarantee you that! Everybody that eats one right away asks me for the recipe, they think it’s so complicated because the texture and flavor is simply amazing, but honestly the two things that really do make these muffins so wonderful are the 2 tablespoons of sour cream and the tiniest pinch of cinnamon. The sour cream makes the cake part itself so moist and delicious and the cinnamon brings out the best chocolate flavor and together it’s a match made in heaven! I hope you guys try these out and I am sure you will be making these all the time because they are that good! Enjoy!

Roasted Potato Stacks
Serves 4
INGREDIENTS:
3 tablespoons olive oil
2 cloves garlic, minced
1 lb. Russets potatoes
Salt and pepper
1 tablespoon fresh thyme leaves
METHOD:
1. Preheat the oven to 350F/180C.
2. Make the garlic oil: combine the olive oil and garlic in a small saucepan and gently warm over low heat until fragrant but the garlic is not brown. Remove from the heat and set aside.
3. Peel the potatoes and thinly slice them with a mandolin.
4. Brush 8 muffin tins with thr garlic oil with a pastry brush. Layer a potato slice in the bottom of a muffin tin and brush it with a thin layer of garlic oil. Layer another slice of potato and brush it with the garlic oil. Repeat until it stacks up to the top of the muffin tin.
5. Repeat step 4 with a new muffin tin until you have a total of 8 potato stacks.
6. Season with salt and pepper. Sprinkle the potato stacks with the fresh thyme leaves.
7. Bake the potato stacks in the preheated oven for 35-45 minutes or until the potatoes are golden brown and cook through.
8. Serve immediately with any main entrees.

Candice's Garlic-Cheese Biscuits 

Bake at 450 degrees for 20 minutes (or until lightly brown). Remove the biscuits from the oven and brush the rest of the topping over them.
2 cups Bisquick Baking Mix
2/3 cup Milk
1/2 cup shredded cheddar cheese (2 ounces)
1/4 cup margarine or butter, melted (2 Tablespoons of butter)
1/4 tsp. garlic powder /salt
1/4 teaspoon dried parsley
teaspoons of oregano
*if you have 1/2 cup sour cream

Topping
  • 6 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon of oregano
  • a pinch of salt

Mix baking mix, milk and cheese until soft dough forms; beat vigorously 30 seconds. Drop dough by spponfuls onto ungresed cookie sheet.
Bake 8 - 10 minutes or until golden brown. Mix margarine and garlic powder; brush over warm biscuits before removing from cookie sheet. Serve warm.
10-12 biscuits

Today I had a snack box from KFC for dinner.

I remember I was dating this guy. And he wanted a 3 piece meal and a 4 piece meal..... he ate like an obese man... So one day he told me I would have to go into KFC and buy him exactly that. I told the person at the counter and the guy at the counter said... oh we can't do that. why don't you order the 12 piece meal and medium fries. I didn't know what to say about that..... I got really confused and I spent about 23 bucks which isn't anything for his meal. I was so upset because its like dammit buy your own damn food or least order it!

never again will i ever let a man boss me around to 'order' him a 4 course meal. Fool.
I'm happy we are not together and I'm happy I can now eat KFC lol in peace!

Today for work I went out for Hakka food. Thank goodness I didn't eat anything for breakfast only a few snack- raisin bread.

I shared a meal with my co-worker:
Manchuaran Chicken and Hakka Chow Mein- Veggies



It was really good!
However next Friday I'm going to have a Felafel - nothing more nothing less. I gotta save some money next week!

This is probably my most favorite comfort food! Its Kraft Dinner - Alfredo style! It is so yummy and my soul tip is to add cut up hot dogs. Since I don't like to cook with salt. The hot dogs give it a nice salt flare.

Ingredients
  • 1pack of all beef hot dogs (you can substitute sausage or less traditional types of hot dogs, like turkey or tofu)
  • 1 egg
  • All-purpose flour, for work surface
  • 1 box (17.5 oz.) frozen puff pastry, thawed
  • 3 tablespoons poppy and/or sesame seeds (optional)
  • Ketchup and mustard, for serving

Directions
 Preheat oven to 375°. Spray baking sheets with non-stick cooking spray or line with parchment paper.
On a lightly floured work surface, working with one sheet of puff pastry at a time, roll into a 14x11 inch rectangle. Cut lengthwise into seven 1 1/2-inch wide strips.
Cut each strip crosswise into 4 rectangles, each about 3 1/2 inches long. In a small bowl, beat together egg and 1 tablespoon water; set aside.
Place a beef hot dog on the narrow end of one piece of pastry. Roll to enclose, brushing with some of the beaten egg to seal the end, if needed.
Transfer the wrapped smokies to the prepared baking sheets. Repeat process with remaining smokies and puff pastry.
Brush the tops of puff pastry with egg and sprinkle with seeds, if using.
Transfer to refrigerator and let chill for 15 minutes. Transfer baking sheets to oven and bake until puffed and golden, 15-20 minutes. Let cool briefly before serving with mustard and ketchup.

I first started cooking this for my family a few years back. I was craving...SALMON. I asked my Dad to buy the boneless steaks. So now that is all he buys. This dish is so yummy. You can bake, semi-fry the salmon in olive oil.
What you need:
Salmon
- 2TBS of Olive Oil on the pan
- Normally I'm cooking for my family so you can fit 4 steaks on a big pan
These two ingredients are stuffed inside my salmon
- Puree'd Green Onions
- Garlic
Pasted On top: basil, parsley, oregano, garlic, green onions

Fries
- Depending if it's a good day bake the fries
- Fry them

Dressing the Salmon after:
- lime
- SeaFood sauce (little spread)
- Honey Mustard
Dressing the Fries:
- honey mustard
- I don't cook with salt...

***Side of tarter sauce for salmon and fries yum

This is a super easy dish. Kinda my way of re-inventing Fish n' Chips.
Very easy to do about 30 minutes to prepare.
