Have you been to Uncle Mike’s on Grand and Paulina?
They have a fantastic Filipino breakfast, put sweetened condensed milk in their iced coffee, and generally feed the shit out of you without feeling like you’re spending a ton of money. Thing is, I always leave feeling like I overordered. All I ever want is their garlic fried rice, maybe an egg.
The rice is always pleasantly garlicky and oily, slightly sautéed with a side of vinegary salsa that mixes very well with the rice and egg.
Today I decided to try it at home. I’m not sure if my rice frying confidence was beginners luck, or from watching the chefs at the Chinese take out joint I worked at from age 15-17.
I made some long grain rice, fried it up with 7 cloves of pressed garlic and canola oil until it got crispy. After confirming it was adequately salty, fried an egg and drizzled some white vinegar on top to mimic their ‘salsa’
I probably still smell like garlic. Worth it.
