In Baltimore, the fire-damaged, 30,000-square-foot historic American Brewery building sat empty for 30 years until a $24+ million renovation turned it into offices for Humanim, a non-profit social service agency. 

At the core of the building rises a multistory, 10,000-bushel grain silo constructed of stacked 2-by-6-foot yellow pine boards. This unique structure was maintained, given flooring, and opened up to make impromptu seating areas. Snaking through the building are what appear to be vestigial air ducts; periodic Plexiglas panels placed on them allow glimpses of an automated system of belts and scoops once used to convey grain to the upper floors. And on the first floor, a massive steel tank likely used to heat a mix of malted barley and water called “wort” has been carved up to serve as a curvilinear work area [pictured above]. Where large beer tanks were removed in the renovation, their diameters and positions are memorialized with gray circles of carpeting.

 The building, built in 1887, is on the National Register of Historic Places; following its reopening in 2009, additional redevelopment has taken place in the surrounding neighborhood.

Alie arrived at our 1st-grade classroom wearing a sweatshirt with a hood. I asked her to take off her hood, and she refused. I thought she was just being difficult and ignored it. After breakfast we got in line for art, and I noticed that she still had not removed her hood. When we arrived at the art room, I said: “Allie, I’m not playing. It’s time for art. The rule is no hoods or hats in school.”

She looked up with tears in her eyes and I realized there was something wrong. Her classmates went into the art room and we moved to the art storage area so her classmates wouldn’t hear our conversation. I softened my tone and asked her if she’d like to tell me what was wrong.

“My ponytail,” she cried.

“Can I see?” I asked.

She nodded and pulled down her hood. Allie’s braids had come undone overnight and there hadn’t been time to redo them in the morning, so they had to be put back in a ponytail. It was high up on the back of her head like those of many girls in our class, but I could see that to Allie it just felt wrong. With Allie’s permission, I took the elastic out and re-braided her hair so it could hang down.

“How’s that?” I asked.

She smiled. “Good,” she said and skipped off to join her friends in art.

Groundhog Day

Today is Groundhog Day also known as my favorite holiday of the year. Why? It’s simple. The film with the same name carries a message so deeply intertwined with unconditional love that it’s hard not to love it.

The day that repeats itself, it never ends, why? Because we continue making the same mistakes of being selfish, greedy, ignorant, and petty.

When does the day end and we get released from an infinite cycle of misery? When we learn to love all people unconditionally, without expectations.

Vegan Tacos

Ingredients

  • Olive oil
  • 1 cup of roughly chopped zucchini or summer squash
  • 1 large fresh mild green chile (Anaheim or Hatch), seeds and stem discarded, chopped
  • 1/2 fresh jalapeño chile pepper, seeds and stem discarded, minced
  • Salt
  • Pinch of ground cumin
  • Pinch of ground oregano
  • 1 small to medium tomato, chopped
  • 4 corn tortillas
  • Vegan cheddar cheese as needed
  • A few sprigs of fresh cilantro, chopped
Put some olive oil in a pan, add all veggies and stir. After 2-3 minutes add spices and salt to taste.
Warm up your tortillas, add the combo. Eat like a vegan champ.

White Bean Puree - Perfect for a Super Bowl Sophisticated Snack

Yields: 24 servings | Prep: 15 minutes

1/2 cup extra-virgin olive oil
2 1/2 cups cooked white beans, or drained and rinsed canned beans
2 tsp minced fresh rosemary
1 tbsp fresh lemon juice
Salt and freshly ground pepper, to taste
Paprika for sprinkle

In a food processor, combine the white beans, rosemary and lemon juice. Pulse until the beans are partially pureed, 5 to 10 seconds. With the motor running, pour in the olive oil and process until a smooth puree forms, 5 to 10 seconds more. Season with salt and pepper.

Serve as a dip with vegetables or crackers.  Or spread the puree on crackers or slices of baquette and garnish with paprika.

Optional: Add sliced red peppers to the final mix.

Vegan Gruyère Cheese Gougères ©‘The French Laundry Cookbook’ By Thomas Keller, November, 1999
Makes about 4 dozen gougères (I only made ¼ of the recipe)
Gougères are a classical preparation often served at wine tastings in France. The puffs are made from a savory pâte á choux, or cream puff dough-flavored here with Gruyère. They are best served hot out of the oven, offering that creamy-dough gratification. Don’t add the cheese, & the puff is a base for a dessert.
1 cup water
7 tablespoons (3-1/2 ounces) unsalted margarine
3/4 tablespoon kosher salt
Pinch of sugar
1-1/4 cups (5 ounces) all-purpose flour
4 to 5 flax seed replacer (1 cup ground flax seed powder:3 cups water = 1 flax seed egg)
1-1/4 cups grated Vegan Mozzarella
Freshly ground white pepper

Preheat the oven to 450 degrees F. Line two baking sheets with Silpats or parchment paper.


In a medium saucepan, combine the water, margarine, salt, & sugar & bring to a boil. Add all the flour at once, reduce the heat to medium, & stir with a wooden spoon for 2 minutes, or until the mixture forms a ball & the excess moisture has evaporated (if the ball forms more quickly, continue to cook & stir for a full 2 minutes).

Transfer the mixture to the bowl of a mixer fitted with the paddle & beat for about 30 seconds at medium speed to cool slightly. Add flax seed mixture & continue to mix until completely combined & the batter has a smooth, silky texture. Stop the machine & lift up the beater to check the consistency of the batter. The batter in the mixing bowl should form a peak with a tip that falls over.

Check again. Finally, mix in ¾ cup of the vegan cheese & adjust the seasoning with salt & white pepper.

Fill a pastry bag fitted with a 3/8” plain pastry tip with the gougère batter. Pipe the batter into 1-tablespoon mounds on the baking sheets, leaving about 2“ between the gougères as the mixture will spread during baking. Sprinkle the top of each gougère with about ½ teaspoon of the remaining grated cheese & bake for 7 to 8 minutes, or until they puff & hold their shape. Reduce the heat to 350 degrees F. And bake for an additional 20 to 25 minutes. When the gougères are done, they should be a light golden brown color. When you break one open, it should be hollow; the inside should be cooked but still slightly moist. Remove the pans from the oven & serve the gougères while hot.

Favorite dinner would be organic kidney beans with simple seasoning (salt, black pepper) and a side of fresh tomatoes, jalapenos (pickled), plain tomato sauce with salt and a little bit of brown sugar based salsa and any kind of burrito or taco wrap. Or with plain nachos.

Vegan Strawberry Smoothie

Ingredients

  • 4 tsp flax seeds
  • 2 ripe bananas (preferably cold)
  • 1lb strawberries
  • 1 cup coconut milk (or soy milk)
  • 1 tbsp grape molasses (or 2 dried apricots/prunes/dates)
  • 4 mint leaves (plus more for decoration)

Method

  1. Put all ingredients into a blender and blend on high speed for 30 seconds or until smooth.
  2. Pour into glasses, garnish with mint leaves and serve.

Vegan French Toast

A dessert-like breakfast. =)

  • 6 slices of your favorite bread, preferably whole grain — thick slices work best
  • 1 cup non-dairy milk (I like oat milk)
  • 2 Tablespoons silken tofu
  • 1 tsp. granulated sweetener
  • 1 tsp. vanilla
  • 1/2 tsp. sea salt
  • 1/2 tsp. cinnamon
  • dash of nutmeg

1. Process all ingredients in a blender until smooth.

2. Lightly oil a large frying pan with a touch of coconut oil, organic canola or non-hydrogenated non-dairy butter (my preference, such as Earth Balance).

3. Dip the bread slices into the mixture, covering both sides. Cook over medium-low heat, flipping once, until golden and crispy on both sides.

Serves 3.

Variations:

  • Add one ripe banana or a handful of blueberries to the mixture before blending
  • Serve topped with your favorite fruit
  • Double the recipe and wrap cooled french toast tightly between layers of saran wrap, then freeze for a quick breakfast on a busy morning

Sesame seed cookies with maple-tahini icing (makes 18 cookies)

Preheat oven to 325˚ F * 1/2 cup sesame seeds, toasted (see story) * 1/2 cup evaporated cane juice (Sucanot) * 4 tablespoons oil * 1 cup white whole wheat flour * 1/4 teaspoon sea salt * 1/2 teaspoon baking powder * 1/4 cup non-dairy milk * 1 teaspoon vanilla 1. Toast the seeds as described in the story above. 2. Beat the sugar and oil together with a spoon in a large bowl. 3. Beat in the milk and vanilla. 4. Sift or whisk together the flour, salt, baking powder in a small bowl. 5. Add the flour mix to the sugar mix and combine well. 6. Stir in the sesame seeds. 7. Form into small balls and place on a lightly oiled baking sheet. Flatten with the bottom of a wet glass or with your wet finger tips. The cookies should be thin. (Don’t get them too wet!) 8. Bake 20 to 25 minutes at 325˚ F. Watch carefully so they turn golden but don’t burn. (See story.) 9. Cool on a rack. Maple-tahini icing * 1/4 cup maple syrup * 3 LEVEL tablespoons raw tahini (see story) * 1/2 teaspoon vanilla * few grains os salt 1. Place the 1/4 cup of maple syrup in a small pot. Cook over medium low heat until it starts to bubble. Cook and stir for 3 minutes, bubbling gently, then turn off the heat and quickly whisk in the 3 tablespoons of tahini, vanilla and salt. Whisk the mixture until it’s perfectly smooth and a little glossy. 2. Now work fast because the icing will harden quickly. Spread some icing on each cooled cookie. You should have just enough for 18 crispy cookies. note: These cookies freeze well and taste great right from the freezer. They don’t taste frozen, they taste crisp.

Vegan Chocolate Chip Cookies with Almond Milk

Yield
: 12-14 large cookies

Ingredients:

  • 7 tbsp Margarine + 1 tbsp extra virgin olive oil (or 1/2 cup Earth Balance- see note)
  • 1/2 cup packed brown sugar
  • 1/4 cup cane sugar (or use white)
  • 1 flax egg: (1 tbsp ground flaxed mixed with 3 tbsp water)
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 cup whole wheat pastry flour
  • 3/4 cup all-purpose flour
  • 1/4 tsp cinnamon
  • 1/2 cup dark chocolate chips

1. Preheat oven to 350 and line a baking sheet with parchment paper. In a small bowl, mix together the flax egg and set aside.

2. With an electric mixer or in a stand mixer, beat the Earth Balance until fluffy. Add the brown sugar and cane sugar and beat for 1-2 minutes until creamy. Beat in the flax egg.

3. Beat in the remaining ingredients and fold in the chocolate chips.

4. Shape balls of dough and place on the baking sheet. Bake for 10-12 minutes (or up to 14 mins on a Silpat mat). Allow to cool for 5 mins. on the baking sheet and then transfer to a cooling rack for another 10 minutes.

Note 1) For a crispier cookie edge, use 7 tbsp margarine and 1 tbsp olive oil. I preferred cooking them this way. They also spread out a bit more. Alternatively, for a softer cookie, use 1/2 cup Earth Balance and no oil.

Note 2) As suggested by Ashley, to retain the crispy factor of the cookies place them in the freezer after cooling in a container or baggie. It was the only method I tried that kept the crispiness of the cookies! Simply thaw on the countertop.

Fruit Christmas Tree!

Party Jalapeno Poppers
vegan, makes 10 poppers

5 large jalapeno peppers, de-seeded and halved

cheese mixture:
1/4 cup vegan cream cheese
1/4 cup vegan cheddar cheese shreds

Flour Mixture:
2 Tbsp whole wheat flour
1 Tbsp Yeast
Dash of chipotle powder
Pinch of salt and pepper

Panko Bread Crumbs

Small flat bowl of soy milk (about 1/4 cup)

1+ cups grape seed oil (you can also use olive oil)

Directions:

1. Prep your jalapenos by halving them and carefully removing the seeds. Set aside.

2. Get your “breading” station set up. You will have a bowl for each of these: cheese mixture (fold the shreds into the cream cheese), flour mixture, panko crumbs, soy milk.

3. Start prepping your jalapenos. Here is the method: stuff with cheese, roll in milk, roll in flour, back in milk, roll in panko crumbs, set aside. Pressing the panko crumbs into the wet cheese layer really helps. Continue this process until all the jalapenos are stuffed and breaded.

4. Pour your oil into a large pot over med-high heat. Test the oil for heat-readiness by dropping one panko crumb into the oil – if it sizzles, the oil is hot enough. If you can get by with cooking all your poppers with 1 cup of oil, great. But if you want a more saturated “fry” you may need to add more.

5. Pan-fry eat jalapeno popper for about 90 seconds on each side. Flip with care.

6. Transfer poppers to a paper towels to cool for a few minutes before serving.
