Share in the Laughter and Love

Truly there is nothing material which lasts forever. Everything passes away. Trends come and go. Clothes and hairstyles change with the whims of the weather. Even foods have become commodities of the hipster ‘culture’, wherein hot veggies will be featured on menus around restaurants around town.

Make Moments Happen

Let’s say you work for a coffee shop. You earn minimum wage or below that if you’re getting compensated in tips. Really your job is to take orders. But, you decide that you will treat customers as if they’re your friends. Not in an annoying way, but you’ll pretend that you’re the host of a coffee cupping and will go out of your way to make sure that you put a smile on the faces before they leave.

You’ve just made a moment. One that will make people forget what they had, but remember your face.

I had a similar experience today at a Starbucks in India and realized the simplicity of it all. I’m not a fan of Starbucks coffee. I like it, but it is not my favorite. But, I will return to the shop only to interact with the person once again.

Social Media Love

In social media, it is difficult to share great moments. The reason being that so much of it can be manufactured. But, here, what really shows is effort. When a post has been thought through, designed, crafted with care, the user sees it. Forget the statistics for a while, the percentages of people who will see your post, etc. 

Craft each post as if your brand’s future depended on it. Reach out and connect. 

But the truly wonderful way you can make people remember you on social media is to be truthful.

If someone hated your product, don’t delete their comment. Let it be. Don’t simply apologize, fix it. Don’t give a free coupon to your product or service, improve the service - let the customer pay for an improved service rather than giving away the same shitty disconnected tripe.

Fun is the first aspect that needs to be infused in every facet of your social media presentation.

  • Taking pictures is fun.
  • Writing random quotes is fun.
  • Taking in trivial facts is fun.
  • Voting is fun.
  • Solving puzzles is fun. 

What’s not fun is making everything in your social media campaign something to sell. Let people have fun. If they enjoyed themselves enough, they will let you know through purchases.

If they don’t, maybe you’re not providing enough fun things for them to do with your brand.

Let them have fun!

Will Starbucks change the coffee culture in India?

India, while being well respected globally for its coffee beans has just recently in the past decade truly come into accepting its rich and enamored commodity. Through the coffee shop/cafe setup, outlets of Cafe Coffee Day, Barista, Costa and other global brands are now commonly frequented by the youth.

But with coffee shops, not much of the social culture of India’s youth or adults, for that matter has changed. That is to say, people do not visit coffee shops to strike up conversations with those they don’t know.

Generally, coffee shops are frequented by groups of friends, large or small. Sometimes you’ll see business styled meetings happening, but it is rare to glimpse upon a chance encounter happening at a coffee shop. The lore of the cafe serenades us with stories of serendipitous encounters. Where those who are caffeinated have an opportunity to engage with strangers over common interests, ruminate about philosophy, start revolutions or forge friendships and even business deals.

Thus far the culture of the coffee shop in India has been lacking. But will Starbucks infuse this missing factor into the Indian cafe? What do you think?

An 87 Year Old College Student Named Rose

The first day of school our professor introduced himself and challenged us to get to know someone we didn’t already know.
I stood up to look around when a gentle hand touched my shoulder. I turned round to find a wrinkled, little old lady beaming up at me
with a smile that lit up her entire being.

She said, “Hi handsome. My name is Rose. I’m eighty-seven years old. Can I give you a hug?”

I laughed and enthusiastically responded, “Of course you may!” and she gave me a giant squeeze.

“Why are you in college at such a young, innocent age?” I asked.

She jokingly replied, “I’m here to meet a rich husband, get married, and have a couple of kids…”

“No seriously,” I asked. I was curious what may have motivated her to be taking on this challenge at her age.

“I always dreamed of having a college education and now I’m getting one!” she told me.

After class we walked to the student union building and shared a chocolate milkshake.We became instant friends. Every day for the
next three months, we would leave class together and talk nonstop. I was always mesmerized listening to this “time machine”
as she shared her wisdom and experience with me.

Over the course of the year, Rose became a campus icon and she easily made friends wherever she went. She loved to dress up and
she reveled in the attention bestowed upon her from the other students. She was living it up.

At the end of the semester we invited Rose to speak at our football banquet. I’ll never forget what she taught us. She was
introduced and stepped up to the podium.

As she began to deliver her prepared speech, she dropped her three by five cards on the floor. Frustrated and a little embarrassed she leaned into the microphone and simply said, “I’m sorry I’m so jittery. I gave up beer for Lent and this whiskey is killing me! I’ll never get my speech back in order so let me just tell
you what I know.”

As we laughed she cleared her throat and began, “We do not stop playing because we are old; we grow old because we stop
playing. There are only four secrets to staying young, being happy, and achieving success. You have to laugh and find humor every day.

You’ve got to have a dream. When you lose your dreams, you die.
We have so many people walking around who are dead and don’t even know it!There is a huge difference between growing
older and growing up.

If you are nineteen years old and lie in bed for one full year and don’t do one productive thing, you will turn twenty years old.

If I am eighty-seven years old and stay in bed for a year and never do anything I will turn eighty-eight.

Anybody can grow older. That doesn’t take any talent or ability. The idea is to grow up by always finding opportunity in change.
Have no regrets.

The elderly usually don’t have regrets for what we did, but rather for things we did not do. The only people who fear death are those
with regrets.”

She concluded her speech by courageously singing “The Rose.”

She challenged each of us to study the lyrics and live them out in our daily lives.

At the year’s end Rose finished the college degree she had begun all those years ago. One week after graduation Rose died
peacefully in her sleep.

Over two thousand college students attended her funeral in tribute to the wonderful woman who taught by example that it’s
never too late to be all you can possibly be .When you finish reading this, please send this peaceful word of advice to your friends and family, they’ll really enjoy it!

These words have been passed along in loving memory of ROSE.

REMEMBER, GROWING OLDER IS MANDATORY. GROWING UP IS
OPTIONAL.

Tandoori Cauliflower

  • Cauliflower Florets (medium)-2 cups
  • Dairy Free Yoghurt-1 cup 
  • Crushed Ginger-2 tsp
  • Garam Masala-1 1/2 tsp
  • Red Chili/paprika-1 tsp
  • Turmeric-1/2 tsp
  • Lemon Juice-2 tbsp
  • Oil-1 tbsp
  • Salt-to taste
  • Chat Masala (optional)

Instructions

  1. In a ziplock bag mix all the ingredients and let it marinade for about 2-3 hours in the fridge.
  2. Place the florets on a foil lined baking sheet and broil on low for about 20 mins (turning once in between) until all golden and cooked!
  3. Arrange on a platter and sprinkle some chat masala all over.

Kathy’s Peanut Butter, Vega Maca Chocolate Chip Shake
vegan, makes one shake

4 ounces unsweetened almond milk
4 ounces water (or more almond milk)
1 1/2 bananas, frozen
1/3 - 1/2 bar of vegan Chocolate bar (or 2 vegan oreos)
1 Tbsp peanut butter
1/2 cup ice

Blend all ingredients except the chocolate or Oreos. When shake is smooth, add in the Chocolate or Oreos and blend on low until it blends into chips.

Easy Crunchy Tofu Salad

vegan, makes 5 cups

1 lb firm tofu, drained

1 1/4 cups celery, chopped

3/4 cup flat leaf parsley, finely chopped (sub or add dill, basil, cilantro)

4-5 Tbsp Vegenaise (vegan mayo)

3 Tbsp Dijon mustard

1 lemon, juiced

pinch lemon zest

1 Tbsp maple syrup

dressing spices:

1/4 tsp celery seed

1/4 tsp fine black pepper

1/8 tsp cayenne

a few dashes mustard powder

optional fold-ins:

1/2 green apple, finely diced

for more saltiness add in a splash of tamari (or salt to taste if needed)

Directions:

1. Squeeze your tofu dry with a paper towel and slice into large cubes. Steam for about 5 minutes. Let cool.

2. In a large mixing bowl, add all your ingredients and whisk into a creamy sauce. Fold in the tofu and begin breaking into smaller bits with a fork. Fold well until all the tofu is coated.

3. Fold in the parsley and celery.

4. Adjust salt and spices as desired.

5. Cover and place in the fridge until ready to serve - allow at least an hour for the tofu to chill and the flavors to marinate.

Serve with a side of organic chips (I prefer Foodshouldtastegood Chocolate or plain corn chips)

Vegan Tofu Kangjung (Korean General Tso’s Tofu)

Recipe (serves 2-3)

Ingredients

1 16-19 ounce package of extra-firm tofu (frozen, then thawed)

1/3 cup corn starch (or more if needed)

1 cup of steamed broccoli

1 Tbsp finely minced or shredded ginger

2 Tbs soy sauce

1 Tbs white vinegar

4 Tbs agave syrup (or equivalent amount of maple syrup)

1 cup water

1 tsp crushed red pepper flakes (more or less to taste)

1Tbs & 1 tsp corn starch mixed with 2 Tbs water

Directions

Press the tofu to drain the water from it (freezing the tofu beforehand gives it a chewier texture and really makes a difference).

To press the tofu, place it between two absorbent towels on a cutting board. The key is to push out the water without breaking the tofu.

Slice the tofu into 1″ by 1″ cubes.

Put the tofu in batches in a bag or container with a lid, add the corn starch and shake to coat.

Add more corn starch if needed.

Heat oil in a small pan over medium heat and fry tofu in batches until crisp and slightly brown, turning to cook both sides.

Cut broccoli into bite sizes and steam.

Add 1 cup of water and all of the the sauce ingredients except the cornstarch and water mixture to a large pan, stir to dissolve the sugar (maple syrup) bring to a boil over high heat and cook for several minutes.

If desired, you can first saute the ginger, and red pepper in a tablespoon of oil for a couple of minutes before adding the other ingredients.

Add the cornstarch and water mixture to the sauce and continue to cook, stirring. When the sauce thickens enough to be syrupy remove from heat. If the sauce is too runny, combine a little more cornstarch and water and add to the sauce.

When sauce has thickened enough, remove from heat and allow to cool slightly.

Add the fried tofu to the sauce and stir and flip to coat (if desired, you can add the broccoli too).

Serve with brown rice and the steamed broccoli on the side.

Thai Vegetable Soup

YIELD: 4 servings

INGREDIENTS:

* 2 Tablespoons olive oil
* 1 teaspoon crushed red pepper flakes
* 1/4-inch piece ginger, finely grated
* 1 red bell pepper, stemmed, seeded and cut into thin strips
* 1 can coconut milk
* 1 medium zucchini, cut in half lengthwise and then thinly sliced
* 3 cups roughly chopped bok choy
* 3/4 cup roughly chopped cilantro leaves
* 1/3 cup thinly sliced Thai basil
* salt and pepper, to taste

DIRECTIONS:

Heat the oil in a large saucepan over medium heat. Add the crushed red pepper, ginger, and bell pepper and cook for another 2-3 minutes. Add the coconut milk and the zucchini.

Reduce heat to low, cover, and simmer for 5-10 minutes, or until the zucchini has softened. Stir in the bok choy, cilantro, Thai basil and cook, stirring, until the bok choy has begun to wilt. Season with plenty of salt and pepper to taste.

Vegan Berry Scones with Cream

For the quick jam:

1 cup blackberries
1/2 cup blueberries
1/3 cup unsweetened apple juice

Method:

Blend everything together, then simmer over a medium heat, stirring often
Remove from the heat after about 10 minutes, when it has almost reached a jam-like texture
Allow to cool – it will thicken up here too

For the cream:

1 cup firm tofu
3/4 cup icing sugar
2-3 tbsp almond milk
1 tsp vanilla

Method:

Blend all together, adding more icing sugar to reach the desired consistency.

Vegan Strawberry Cupcakes from Michellescakerybakery.net


Vegan Ciabatta Sandwich

Ingredients:

  • 4 ciabatta baguettes
  • 12 slices vegan deli cheese slices
  • 2-3 tablespoons sweet grainy mustard
  • 2 peaches, peeled and sliced

Directions

  1. Slice the ciabatta baguettes through the center as a hot dog bun.
  2. Spread both the top and bottom lightly with the mustard.
  3. Layer 3 slices of vegan cheese.
  4. Peel and slice the peaches and layer the peach slices on top of the deli slices.
  5. Grill and serve warm.

Baked Zucchini Sticks

Ingredients

  • 2 whole zucchini

  • ¾ cup whole wheat bread crumbs

  • 3 tbsp vegan parmesan

  • ⅓ cup plant-based milk

Instructions

Preheat oven to 400F. Grease a cookie sheet or line with parchment paper and set aside. Cut zucchini into sticks 1/2-inch thick and set aside. Grind bread crumbs using a mortar and pestle to a fine consistency. Mix crumbs with vegan Parmesan and a few dashes of salt and pepper. Place crumb mixture into a shallow bowl. Pour non-dairy milk into another bowl. Dip sticks into non-dairy milk and then press all sides into the crumbs mixture. Transfer to a cookie sheet, spray with cooking spray (optional) and bake 15-20 minutes, until the breading is golden brown and zucchini is tender.

Vegan Candied Nuts

- Maple syrup or Brown Rice Syrup (or both)

- Add to a large skillet or pot and sprinkle in cinnamon, fresh ground nutmeg, cardamom, and a bit of salt

- Add a bit of vegan butter

Let it all reduce to a syrup.

- Add nuts of your choice, and mix thoroughly to coat them.  (Aim for a ratio of about 1:6, sweetener:nuts.) 

Once the liquid is basically gone, turn them out onto some aluminum foil or parchment paper.


Vegan burrito. 

Best ingredients to put inside your vegan burrito: 

Black beans (plain chipotle powder), slightly sauteed tofu seasoned with pepper & salt, lettuce, tomatoes, cooked rice flavored with some original Tabasco, vegan cheddar cheese and of course a whole wheat tortilla.

Vegan biscuits

Just made some Lemonbars Larabar style.

1 cup cashews

1 cup Muscat dates (or any high quality dates - seedless)

Half a slice of lemon juice

Process cashews and dates until coarse and doughy. Add lemon juice. Blend some more. 

Place on some kind of saran wrap or smooth non-sticky surface. (My hands got super sticky while making this, use plastic gloves if possible).

Vegan Mozzarella Sticks with Jain Marinara Sauce


 
Ingredients
  • 5 oz vegan mozzarella (Teese from Chicago Soy Dairy)
  • oil for frying
  • ½ c flour
  • ½ c water
  • 1 tbsp cornmeal
  • 1 tbsp cornstarch
  • salt
  • 1 c breadcrumbs (I used panko)
  • ½ tsp salt
  • ½ tsp parsley flakes
  • ½ tsp black pepper
  • ¼ tsp oregano
  • ¼ tsp basil
Instructions
  1. In a wide, shallow bowl, combine ingredients for wet mix. The consistency should be like pancake batter, so adjust accordingly if needed.
  2. In another wide, shallow bowl, stir together breadcrumbs and remaining spices.
  3. Slice vegan cheese into ½” strips. 
  4. Lightly coat each stick with flour.
  5. Dredge each stick in the wet mix, then toss in bread crumbs until fully coated.
  6. Place sticks on a cookie sheet in a single layer, not touching one another, and freeze for at least one hour.
  7. Heat up your deep fryer, or if you don’t have one, pour an inch of canola, corn, or peanut oil into the bottom of a deep pot and heat.
  8. Carefully dip the end of a stick into the oil to check for readiness; if the oil sizzles continually, it’s ready. 
  9. Once it’s up to temperature, fry sticks in batches (6 at a time, not touching one another), about 1 minute per side or until they’re golden brown and you can see a little cheese oozing through the breadcrumbs.
  10. Season with salt and serve immediately, with Jain marinara sauce (tomato puree, tomatoes, salt, oregano with some chunks left in, slight lemon juice as needed) for dipping.

Vegan Blackberry Coconut Crumble Bars 

1/2 cup sugar plus 1 tablespoon 
2.5 cups flour 
1 tsp baking powder 
1/4 cup coconut 
1 cup virgin coconut oil, solid (NOT melted) 
12 oz blackberries (about 2.5 cups)
1 tablespoon lemon juice 

Preheat oven to 375 degrees. Lightly coat a 8” square inch baking dish with cooking spray. Line the bottom with parchment paper. 

Stir together 1/2 cup sugar, flour, baking powder, and coconut. Stir in coconut oil. Press half of dough into pan. In another bowl toss berries with remaining tablespoon sugar and lemon juice. Pour over dough. Crumble remaining dough over top. Bake for 40 minutes until top is golden brown.

Vegan Berry Napoleons

Macaroon Cookies Ingredients:

  • 1/2 cup unsweetened, shredded coconut
  • 1/2 cup raw cashews
  • zest of 1 lime
  • pinch of salt
  • 1 TBSP maple syrup
  • 2 tsp fresh lime juice

Preparation:

  1. In a food processor combine the coconut, cashews, lime zest and salt. Pulse to create a fine meal.
  2. Add the maple syrup and lime juice and pulse until well combined. The mixture should hold together when pinched between your thumb and index finger.
  3. Press into a thin rectangle – approximately 1/4″ thick – on a Teflex sheet and dehydrate for 6 hours at 110 degrees.
  4. Remove from the Teflex sheet, score into 12 rectangles and continue to dehydrate for 6 additional hours. The final texture should be firm but pliable.

Strawberry Cream Ingredients:

  • 1 cup hulled strawberries
  • 2 TBSP agave syrup
  • 1 TBSP lime juice
  • 1 tsp coconut oil
  • 1/4 cup raw cashews
  • 1 TBSP white chia seed

Preparation:

In a blender combine the strawberries, agave, lime juice and raw cashews. Blend until smooth. Add the coconut oil and chia seeds. Set aside for 20 minutes to allow the chia seeds to absorb some of the liquid. Blend until smooth. Chill in the refrigerator until firm (approximately 2 hours).

Garnish Ingredients:

  • 6 fresh strawberries or 1/2 cup fresh blueberries

Preparation:

  1. On a larger serving platter (or four small plates) place four macaroon cookies. Pipe or spread a thin layer of strawberry cream.
  2. Add a layer of fresh berries. Repeat each layer.
  3. Top with a third macaroon cookie and a thin layer of strawberry cream. Serve immediately.
