How many people do you know who send googly-eye-bedecked "Tins of Awesomeness" to their company's clients?
That's just one of the things I've done in my 13-year career working for and with the nonprofit community. In those 13 years I've managed web content, led a variety of engaging print and electronic communication workshops, and created and executed successful multichannel campaigns...all on a shoestring.
What gets me up in the morning? I love teaching, finding creative and cost-effective ways to show appreciation to clients and members, and establishing my current business or organization as a thought leader in its field through social media, blogging and events.
And yes, it's true...I'm a singing pirate in my spare time.

Garden Fresh Meatballs | Everyday Paleo
Made these last night - pretty darn tasty! Couple of notes on the recipe, though:
1. Be sure to use paper towels to squeeze out as much moisture as possible from the zucchini and yam before you mix in the meat.
2. Almond meal is ridiculously expensive. I bought brown rice flour instead and it worked OK, but I had to use more like 1 - 1 1/2 cups of it. Your mileage may vary. Just be sure to have plenty on hand.
3. This recipe made a LOT of meatballs. I made them a bit larger than the recipe said and I still came out with 50 meatballs, which took up two cookie sheets. Be sure you have freezer space available!
Tried this tonight with some fun, curly pasta I found in the cupboard. I made some adjustments per the first commenter (copy/pasted below). Delicious!
A few additions added a LOT of flavor to this recipe: 1 tbsp lemon juice, 1/2 - 1 tbsp finely chopped fresh ginger, 1 tsp+ each of cayenne pepper and chili powder to replace the chili sauce, and chunky peanut butter for crunch. I also used fat-free half-and-half to replace the cream (milk works well, too)
